<p>Here&#8217;s the fun part: You can use whatever gluten-free cookies you have on hand for a last-minute end-of-dinner dessert or pick up some of your favorite cookies at the supermarket. In our crisps, I&#8217;ve become partial to gluten-free graham crackers, vanilla wafers and snickerdoodles.</p>
<p>Also, feel free to switch out the apples and use your family&#8217;s favorite fruit or whatever you pick up in season at your local farmer&#8217;s market.</p>

<p>As a kid, I remember wondering why she always cooked up the same slurry of meals. Yes, every now and then, she would divert from her recipe rolodex and venture out into the unknown recipe world. But for the most part, she stuck to her tried-and-true plan.</p>
<p>Cooking every night for my own family for nearly two decades has changed my perspective on what&#8217;s for dinner. Gone are the grand expectations and here to stay are comforting meals the whole family can enjoy and equally important—that I can assemble quickly or make ahead of the dinner rush. This meatloaf recipe is a variation of my Mom&#8217;s recipe—I&#8217;ve left out the hard-boiled eggs that my kids just don&#8217;t seem to appreciate.</p>

I&#8217;ve added some gluten-free millet flour to the recipe, which enhances the strawberry flavor with its subtle nuttiness while yielding a tender airiness.</div>

<p>In fact, I know exactly why she holds on tight to this pan: Nana Jennie was the sweetest—and strongest—woman I ever met. It just so happens Nana Jennie also made the meanest fudge cake with fudge frosting.<b> </b>Her cake was no joke—and I doubt the pan had much to do with it.</p>

				<content:encoded><![CDATA[<p>My kids are calling it a heat wave. We&#8217;ve hit the 80s here in Brooklyn. Crazy for this time of year. Now, there&#8217;s no denying the one thing that will satisfy me—this thick and creamy smoothie.  <b>It&#8217;s so good, you could even call it dessert. </b>And making it is really as easy as putting all of the ingredients in a blender and blending until smooth.</p>
<p>I wasn&#8217;t always a fan of blended drinks. That all changed when I tasted a smoothie called Peanut Butter Split at a juice bar in Manhattan called <a href="http://www.juicegeneration.com/menu/smoothies"><b>Juice Generation</b></a>. I was blown away by the flavor and creamy texture. That&#8217;s what this smoothie is loosely based on. I changed the peanut butter to almond butter, tossed in some hemp seeds and had myself a cooling, rich dairy-free drink. I hope you&#8217;ll enjoy it, too!</p>

<p>While takeout may be the norm in New York City, I prefer to cook my family&#8217;s meals from scratch. <p>My other solution? I like to keep an arsenal of meals that pretty much cook themselves in my back pocket, like this super-flexible chicken recipe. I like to swap in salmon or extra-firm tofu with different herbs, greens and condiments (think gluten-free soy sauce, barbecue sauce, etc.). You can use whatever ingredients you and your family love to eat—it&#8217;s really as easy as that.</p>

<div>But, I&#8217;m going to be really honest. I&#8217;ve tasted dozens of gluten-free breads from bakeries around the country that friends and colleagues have recommended. The bread looks good in pictures and I can&#8217;t wait to bite into them. Then, I reach into the bag and I can already feel the disappointment. They&#8217;re heavy. They break, not bend. And the flavor? It&#8217;s okay.</div>
